  1. Preheat your oven to 350°F (180°C) and grease and flour two 8-inch round cake pans.
  2. In a large mixing bowl, cream the butter and sugar together using an electric mixer until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Stir in the vanilla extract.
  7. Divide the batter equally between the prepared cake pans and smooth the tops with a spatula.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  10. Once the cakes are completely cooled, spread the raspberry jam evenly over the top of one of the cakes.
  11. Place the second cake on top of the jam-coated cake to create a sandwich.

  • 1 tsp vanilla extract
  • 1/2 cup (120ml) raspberry jam (or any jam of your choice)
  • Powdered sugar, for dusting (optional)
