Tip: if you want to add a bit of bulk to your Quesadillas, mix in a can of kidney beans!

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Add the sliced bell pepper and red onion to the skillet and sauté for 3-4 minutes, or until they start to soften.
  3. Season the veggie mixture with salt and pepper to taste.
  4. Remove the skillet from heat and set aside.
  5. Place a tortilla on a flat surface and sprinkle about 1/4 cup of shredded cheese on one half of the tortilla.
  6. Spoon about 1/4 cup of the sautéed veggie mixture on top of the cheese.
  7. Fold the other half of the tortilla over the filling to create a quesadilla.
  8. Repeat with the remaining tortillas, cheese, and veggie mixture.
  9. Heat a clean skillet or griddle over medium heat and place the assembled quesadillas on it.
  10. Cook for 2-3 minutes on each side, or until the tortillas are crispy and the cheese is melted.
  11. Remove the quesadillas from the skillet and let them cool for a minute before cutting them into wedges.
  12. Serve hot and enjoy your delicious and budget-friendly Veggie Quesadillas!
