Instructions:
- Brew the coffee or espresso and let it cool to room temperature.
- In a medium bowl, whisk together the cooled coffee, 1/4 cup of sugar, and vanilla extract until the sugar is dissolved. Set aside.
- In a large mixing bowl, beat the mascarpone cheese and remaining 1/4 cup of sugar until creamy and smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dunk each ladyfinger cookie into the coffee mixture briefly, just enough to moisten it, and arrange a single layer of soaked ladyfingers in the bottom of a 9×13-inch baking dish or individual serving dishes.
- Spread half of the mascarpone cream mixture over the soaked ladyfingers.
- Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone cream mixture.
- Dust the top of the Tiramisu with cocoa powder using a fine mesh sieve.
- Cover the baking dish or individual serving dishes with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the Tiramisu to set.
- Before serving, dust with additional cocoa powder if desired.
