Instructions:
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter for the crust. Mix until well combined.
- Press the crumb mixture into the bottom of the prepared pan, using the back of a spoon or the bottom of a glass to create an even layer.
- In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the sour cream and heavy cream until well combined and smooth.
- Pour the cream cheese filling over the crust in the springform pan, spreading it out evenly.
- Tap the pan on the counter a few times to release any air bubbles.
- Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the oven door open, allowing the cheesecake to cool slowly for about 1 hour.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set completely.
- Once the cheesecake is fully chilled and set, carefully run a knife around the edges of the pan to loosen the cheesecake, then release the springform pan sides.
- If desired, top the cheesecake with fresh berries or fruit before serving.
- Slice the New York cheesecake into 8-10 servings and serve chilled.
