Note: If you have any leftovers, you can store them in an airtight container in the refrigerator for up to 3-4 days. Cheesecake can also be frozen for longer storage.

Instructions:

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter for the crust. Mix until well combined.
  3. Press the crumb mixture into the bottom of the prepared pan, using the back of a spoon or the bottom of a glass to create an even layer.
  4. In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Stir in the sour cream and heavy cream until well combined and smooth.
  7. Pour the cream cheese filling over the crust in the springform pan, spreading it out evenly.
  8. Tap the pan on the counter a few times to release any air bubbles.
  9. Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and crack the oven door open, allowing the cheesecake to cool slowly for about 1 hour.
  11. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set completely.
  12. Once the cheesecake is fully chilled and set, carefully run a knife around the edges of the pan to loosen the cheesecake, then release the springform pan sides.
  13. If desired, top the cheesecake with fresh berries or fruit before serving.
  14. Slice the New York cheesecake into 8-10 servings and serve chilled.

  • 1 and 1/2 cups graham cracker crumbs ($2)

  • 4 packages (8 oz each) cream cheese, softened ($4)
  • 1 cup granulated sugar ($1)
  • 1 tsp vanilla extract ($0.25)
  • 4 large eggs ($0.50)
  • 1/2 cup sour cream ($0.50)
  • 1/2 cup heavy cream ($0.75)

For the topping (optional):
